chocolate fruit tart
- 1 1/2 cup graham cracker crumbs
- 6 tbsp melted butter
- 2 tbsp sugar
- 16 oz baking chocolate (semi-sweet, milk, dark) you can use a combination if you'd like
- 2/3 cup whipping cream
- 1 tbsp espresso powder mixed with 1 tbsp of water
- 1 handful fresh fruit (raspberries, blueberries, strawberries, etc.)
in a bowl, combine the graham cracker crumbs, melted butter and sugar. toss to combine and fill a 4 x 14 rectangular tart pan. bake in a 350-degree oven for approx. 12 minutes or until just set. cool completely.
place the chopped chocolate in a bowl.
heat the cream and espresso in a saucepan until hot, but not boiling. pour into the bowl of chocolate. let this sit for a minute. stir until smooth. if it does not melt completely, place the bowl over a saucepan of boiling water for a minute to finish melting the chocolate, stirring until completely melted. pour into the baked crust.
toss fresh fruit on top. refrigerate until firm, at least 2 hours. you can enjoy alone, drizzle with chocolate or whipped cream.
