so, lets talk hypothetically for a moment. hypothetically because you know, this never happened to me.Β wink. wink. you’re crunched for time but you volunteered to take a dessert without really thinking about your (lack of) time and now you’re thinking… “oh shit. what do i take that still makes me look like a baking goddess but i really only spent about 10 minutes?” well guess what? you don’t. you failed. you might as well just call and cancel your RSVP…. JUST KIDDING.

have no fear. these easy peasy fruit tarts will deliver. they will save you. your baking goddess title will still hold. we’re not talking miss columbia here. you will be miss philippines. you will get your crown.Β okay. whoa. where did that come from?? moving on…

easy peasy fruit tarts


  1. 8 frozen tart shells
  2. 4 oz. cream cheese
  3. 1/4 cup powdered sugar
  4. 1/4 tsp. vanilla extract
  5. mint leaves
  6. fresh fruit such as raspberries, strawberries and blueberries


  1. thaw out frozen tart shells and bake for 8-10 minutes or until light golden brown
  2. in a mixer, mix cream cheese, powdered sugar and vanilla until smooth
  3. place cream cheese into baked tart shells
  4. top with fresh fruit and mint leaves
