chili lime chicken

story of my life. every time i try to eat healthier, i tend to stock up on chicken and grass fed beef while i search tirelessly on pinterest for healthy recipes that are easy, creative and delicious. but let me tell you. i’m chicken’ed out. like seriously chicken’ed out… until this recipe came along.


i really didn’t think i could eat anymore chicken and then i decided to give this one a try. if it failed, i probably would put off meat forever – not because of any particular reason, just because i was eating so much of it since my recipes lacked creativity. on a side note, did you know americans eat wayyy too much protein and beef? from a nutrition perspective, we’re not even supposed to eat that much meat at every meal… but more on that later.

it’s suggested that you let the chicken marinade for two (2) hours. however, if you’re in a time pinch, a hour to a hour and a half will still give you great flavor. you’ll get BIG flavor if you let it marinade for two hours tho — jus’ sayin’. plus, the chicken gets so soft and juicy as it marinates. really, time is your friend here.

the lime provides a refreshing citrus flavor that makes the chicken totally pop. i went a little light on chili powder but if you are requesting a kick, definitely sprinkle that on as much as you like. i live with the mantra that cilantro makes everything better so chop up that cilantro bushel and pour it into the marinade. everything is your friend here. we have no frenemies in this recipe. embrace it all. this chicken is definitely on the recipe rotation. it’s delicious, tender, juicy and refreshing.



2 – 2.5 lbs skin on chicken thighs


1/2 cup fresh lime juice
3 teaspoons fresh lime zest
1/4 cup olive oil
4 tablespoons fresh cilantro, chopped finely
4 garlic cloves, chopped finely
1 tablespoon honey
2 teaspoons salt
chili powder or to taste


1. rinse the chicken thighs, leave the skin on, and pat dry with paper towels. set aside.
2. get a big bowl, mixing Β all the ingredients of the marinade together using a whisk. make sure the marinade is well combined together.
3. add chicken to the marinade, make sure to stir and coat the chicken evenly. marinate for 2 hours.
4. fire up the grill, brush a little bit of oil on the surface. add a little bit of the garlic and cilantro from the marinade on top of the chicken and grill them until they turn golden brown and charred on both sides. serve immediately.
